I feel for you. This issue is mega frustrating. It's interesting to see that I am not the only one who was getting this issue, because I was really starting to think that it's something specific to my exact location.

MTN came around for a site visit yesterday afternoon (Around 14h00). The chap didn't chat much, but on their 'control' LTE SIM, he was getting around 280Mbps!? And then when switching over to my setup, with my SIM, he was getting around 4Mbps...

So, as a bit of an update to anyone following this (or maybe for people in the future), the awesome peoples at Cool Ideas sent me another new SIM card, and a new router. I have attached a screenshot with the speed tests between the 2. I did two tests with the old SIM and router, before switching...
As it's weekend, I could (and actually remembered) to do speedtests as it hit midday today, to catch the drop-off in action, and my speeds change at EXACTLY 12AM and 12PM each day. These speedtests were from a few minutes ago, and show the drop at exactly midday.

The chap who has been helping me with this issue did give me a call this morning, and mentioned MTN suggesting that I switch the router to 4G only. I have done this, but so far, not much...

The SIM card numbers aren't too similar, but I wouldn't immediately disregard the bad batch theory.
My next step is probably to accept Cool Ideas' router deal to rule out my router being the issue. Would probably be the most convenient if that turns out to be the...
Just an edit; I double checked on our speedtest history, and the problem actually started again from the 21st of May already (Not the beginning of June) So the new SIM worked correctly for about 5 days.
