You sure can. But most of your flavour come from the searing/crust (Maillard effect). So wetting your steak with some marinade will result in no crust/searing. Just searing the sugars in the marinade.You can still braai that without turning it black. It's about heat management and time.
Yes I know you can make marinade without sugar, but lets be honest, 99% of marinades you buy or meat that has been marinated has lots of sugar in it.
There is a reason restaurants will first sear the meat for the flavour and then only after its cooked will put some sweet basting on.
