100% rye bread recipe?

Bread can't be 100% one thing. It needs yeast and salt and things to make it bread. :p

Seriously though, why rye bread? Do you need a jaw work out?

You'd not had decent rye.

Can get some really nice rye at Spar actually, it's dense, but I love it.

Why rye? I've read up a lot about wheat allergies and whatnot, so I'm just trying out rye for a while. Cut out wheat, and the weight drops off you as well.

I have actually. It definitely needs more chewing than normal bread.

Not really. Just balance it out with egg white and as I've said buttermilk. However too much would have you a slumpy bread ;)

I love rye but all the rye bread I've had recently seems to have too much aniseed in it.

It's awesome with real butter and strawberry jam. It's great for open toasted cheese and tomato as well. It's possibly the only bread that counts as exercise to eat so it's probably great for weight loss. :D What does a loaf cost you these days? Out of interest.

It's about R10 iirc. I usually have it toasted with poached eggs and Spanish tomato salad. Nom. Nom nom.

As mentioned, about 10 bucks, but that's for a tiny, tiny little loaf. But this is obviously offset by the neutron star-like density of the bread.

The problem with egg whites is that they're useless at making things lighter without whipping air into them. Once you've mixed air into them, you have to fold them into the base mixture and this ultimately leads to more of a cake texture than bread...
