Any advice for lunch?

Every Sunday I cook up a kg of pasta and roasted veg each. You can then add your leftovers to this mixture the following day and voila - you've got a choice of pasta salad or reheated pasta in the microwave. Also really healthy and filling. You can spice it up with chillis, add fresh herbs, add a pesto, chuck in some ham and cheese if you want, stir in a sauce, chuck in fresh roma/cherry tomatoes, basil, tuna and mayo for a nice salad etc. You've got the base sorted and that's the longest part...

You sound like an Amish housewife :)

How do you store the cooked pasta? Fridge? Freezer ?

It's called vichyssoise.

yeah i know, googling the spelling seemed an effort, and everyone reading it would then have to google it to know what it was..

its 1 of 3 soups i can make without screwing up

I just take a bottle of beetroot to work and it it out of the bottle. Yum.

Hahahah I once had carrot juice  So I told my friend it was vodka and fanta..should of seen his face after the fat gulp :D

I suppose it comes down to personal taste. Carrot juice I enjoy, maybe I HATE beetroot because my parents forced me to eat it as a kid.

Come to think of it I actually enjoy pineapple, carrot & ginger juice combined, awesome stuff.

Nothing wrong with beetroot in my books. But some psychologists might wanna have a sit down with someone eating large quantities of beetroot every day for lunch...:erm:
