As a newbie to the competitive fps scene, can somebody tell me if playing these games with a high ping would ingrain bad habits, or could I still consider it good practice even if not ideal?

I can't play on 200ms unfortunately, love Apex just play a game that is that smooth at 200ms.

It probably doesn't matter that much but for ultimate muscle memory you need consistency, that means an average ping that is as low as possible, but consistent in most important.

Now Apex does handle high ping well, which gives that consistency.

However, CSGO pros are only playing CSGO. Almost like a discipline. To be the best in that game, you have to make it your new life. Otherwise, there will always be a little casual player in you, which I prefer. Games for me are casual, for pros it's life. We're built differently.

Games like Apex, Overwatch and Team Fortress are very forgiving when it comes to ping, you'll be fine

Games like CSGO and Valorant requires very good ping though

My 2c as I recently posted elsewhere here:
I have probably 1000 hours+ on the game/level 500/all the badges, etc.

Pings for me range from 155 - 220ms (Fibre 100mb cape town). One match is smooth 155 and the next is 220ms and packet loss galore. Even feels like FPS drop yet FPS is 165Hz. It's kind of consistent and when it's bad, it's kak.

The game generally is one of the better ones when it comes to latency but (there is a big but) you still need to change your playstyle a lot. On pubs, 9/10 players want to hot drop to the busy areas and you basically have a 99/100 chance of dying immediately. If you land next to someone it appears as if you get to the loot first but the other guy always gets it and you die.

It is much better if you land just off the hot spot and allow 1 minute to gear up before getting in on the action. I'm not suggesting loot for 15 minutes just 1 minute. Also, play with other South African players who understand the disadvantages we have. You can still win and kill a lot.

I have hung up my boots for now and alt f4d + uninstalled for the last time (for now anyway... the game is super addictive when it goes your way). This game has a strong competitive league/thousands of streamers and we end up playing on the same servers as them and they are very good. In the end, I just got gatvol going head to head with them with a 200+ ping every 2nd or 3rd match when my teammate decides to hot drop.

Don't really know what else to play now as most games have even worse latency. Currently playing Flight Simulator and AOE4 :)
