An estimated 1 in 133 people, or about 1% of the population, has Celiac disease/Gluten intolerance.

Gluten is a protein found primarily in wheat, barley and rye.
If a person has a gluten intolerance, this protein can cause digestive problems such as gassiness, abdominal pain or diarrhea.

Gluten intolerance is sometimes confused with Celiac disease, or thought of as a food allergy.

If you're gluten intolerant and crave bread sourdough is the way to go.

the gluten in sourdough is converted to amino acids before baking so it's easier to digest.

I believe artisan bread left to autolyze for 12 to 16 hours has the same benefits.

OP first calls it celiac disease and gluten intolerance as if one and the same, then later says they to are often confused.

Contradiction much?

Intolerance does not equal disease.

definition of intolerance: an inability to eat a food or take a drug without adverse effects. sounds like a disease to me...

Your own post says the two are NOT one and the same as you suggest in your first sentence.



Intolerance means your body is slightly offended at something. You aren't allergic and you cab have whatever it is in reasonable quantities without issues.



Disease means it can kill you or put you in hospital.

Same way gluten allergy and intolerance are also not remotely the same thing.

Everyone is suddenly gluten intolerant because it's the new fad.

Very few are genuinely allergic or have celiac disease as per your 1% quoted.

There are a lot of people who think they are gluten intolerant...

Usually the fat people with the greasy lips stuffing their face with fatty steak. But...Tim Noaks says it's healthy...
 
Bloat. Nothing else really, but I prefer to look and feel slim so I limit myself to a slice of toast or a roll per day. Often not eating any bread or pasta for days.
