I'm experiencing shockingly poor wifi signal with my brand new AC51U setup as a fibre modem

The crappy Free MWeb WRT modem signal strength was much stronger.

This is the worst signal strength i have experienced from any modem

Updated to the latest firmware

Suggestions out there

Maybe you just have a dud unit?

I haven't had that model, but I had the N55U and now the AC68U, and both have had awesome coverage. There is a setting somewhere in the admin page that you can reduce the output power of the radios though. Have you tried checking that?

Was the free MWeb modem 2.4 GHz only, or did it also have 5 GHz?

Yeah it would. The thing to check would be whether it was reduced.

Obvious question but both antennas plugged in and angled as advised by the manual?
 
Very odd. Can't say I can think of anything else you could try right now. In my experience, Asus routers have had great coverage vs cheap ones.
