Baby Back Ribs

Hi there,

I usually see baby back ribs on American food shows. Is this cut also available in SA and where would one get it?
 
It's pork loin ribs, as opposed to belly ribs (spare ribs) that you'd usually see in restaurants

I now can't get Chili's Baby Back Ribs jingle our of my head...:mad:
 
If you find ribs, remember to remove the membrane from underneath before cooking or marinating.

The membrane is a water and air tight seal, used to keep the chest cavity airtight. Its tough and chewy, and marinade does not penetrate it. Look for guides on the internet.

Raw pork ribs of any kind are somewhat rare, but I got some from Checkers Sandton City the other day.
 
Marinades don't really penetrate anything to be honest. They're mostly a waste in terms of getting flavour into meat...
 
We have a guy at work that sell's 10kg boxes, but he usually only has the nomal belly ribs. Thanks for the info.
 
If you braai the ribs for a really long time (like 4 hours) at a very low temperature then the marinade almost forms a crust on the rib and the rest of the sauce gets really sticky and full of flavour. Nothing better than a well cooked rib in a sticky sweet sauce!
