How do you prepare it (if at all) ?

I just do not like it; it has no flavour or taste to me, so maybe I am not using the right recipes to bring out the taste. I normally roast it in the oven, or cook with tomato and onion.

Grate a few baby marrows into a bowl. Salt (somewhat generously) and let sit for at least 30 mins. Take a disposable rubber glove (unless you like burning/stinging hands), or use a sieve to squeeze water out of grated marrows. Toss back into bowl and add 1 egg per ±5 marrows. Add breadcrumbs, garlic, onion(powder),whatever herbs & spices you like (nutmeg is ok). Mix.

Get a pan and add plenty of oil (I use coconut), turn up to medium-high, take the mix and spread it out on pan in a size that's comfortable for you then fry it up like you would a hash brown. Flip when it gets dark brown.

Great with your favourite sauce/gravy (I like them covered in wild mushroom sauce - but sometimes they're fine without anything extra). Healthier than hash browns, I think.

I slice them up and fry them with salt and pepper.

I rather like to make a baby marrow salad. Use a potato peeler to shave off thin layers lengthwise (this gives them a better texture than slicing them normally, and makes the presentation nicer). Serve with a vinaigrette dressing, I like to add garlic, honey and wholegrain mustard to my vinaigrette when serving it with baby marrow.

They don't really have much flavour on their own, which is what the dressing is for, but they have a nice, crunchy texture when raw.

This sounds divine, thanks .... and thanks to all the other posters for their ideas too.

I hate the things. Totally tasteless every time I've eaten them so never bothered trying to cook them myself.

And as nice as Ejeckt's recipe sounds.... I venture if you omit the baby marrows or substitute them the dish will taste the same/better.

Sure, it also works with eggplant, potato, sweet potato. It's just about the texture though; for that baby marrows are just awesome (when excess water is removed, ofc). They absorb sauce well.

Here's another you can try. Slice (sometimes you can use a peeler) lengthwise so you have long, thin pieces. Salt and leave for 30 mins on paper towel. Over medium heat saute for five minutes with olive oil till it's lightly browned. You've just made marrow paperdelle noodles that you can use with any pasta sauce.

Marrows are just one of those very neutral flavours that go well with many things, and should be taken advantage of for their texture.

Never liked it and I would rather substitute it with something else.

It's not as if baby marrows have got essential nutrients that can be found nowhere else!!!
