I'm trying to set up the device as follows

DHCP Router => Hap AC2

1) So the Hap AC2 need to move from 192.168.88.1 to address assigned by the DHCP Router.
2) It needs to forward/Relay any connections via Lan or via Wireless interfaces to the DHCP Server

Step 2 I think I have a handle on Via creating a DHCP Relay on the interfaces not connected to dhcp server.

Step 1 seems impossible, I try something and loose all access and have to factory reset.

Any help would be appreciated
 
Not sure if they use a bridge for the lan ports but if they do:

If you have enough ports you can just ignore the wan port, even disable it

If you dont have enough ports you will have to:
-disable the dhcp server on the Hap - IP -> DHCP server -> disable the entry there
-Interface -> Interface list -> change the wan port to be part of the LAN list/group
-Bridge -> Ports -> add the old WAN port to the bridge

Setup a dhcp client on the bridge interface: IP->DHCP client
 
@roughiain although I cannot comment on what you are trying, you do not need to reset to factory defaults - Mikrotik is accessible through its MAC address as well, no IP required.

Tried to access via mac and winbox had no luck.

the reset button is going to stop working through overuse
