I am currently with Rain 5G Unlimited, and I have been loving their speeds (200MBps average since they installed the ODU), but I think I've been throttled this month (they assured me that they don't throttle these accounts). I cannot have this as I'm working from home.

I'm looking at a 100MBps Fibre line (R1200 max) month to month - Who do you recommend, please? And do I go with OpenServe or Metro Fibre?

Openserve would be my option if I had the choice

Openserve if your ISP is having issues you can just get another ISP's ADSL account and switch to their network.

I can 100% recommend Openserve. Good install turnaround times and we hardly get any Openserve queries. ISP wise I would say Afrihost

Currently Openserve speed upgrade promo is still running so 40Mbps upgraded to 100Mbps. So if you get installed on 40Mbps it will take about a week then you should be upgraded to 100Mbps. This will last until end of July and then revert back to 40Mbps. You can then do an upgrade if you wish.

*ps I do work for them so 100% bias :p
