So IYO, which first aid course has the best content (as in you actually learn stuff that can help instead of sitting in a room for a week to get a workplace certificate) and which is the most recognised locally and internationally?

I recently did a "Stop the Bleed" course. Its focus is only on stopping massive bleeding injuries, so nothing else.

Very eye opening.

Sadly those are being targeted at American schools...
Looked at them, they seem to use techniques rather left to military medics like use of a tourniquet.

Not really. Recently there was a news story about a motorist saving the life of a cyclist that was shot in Krugersdorp....Stop the Bleed.

When the plane crashed in Wonderboom and the one factory worker lost his legs...Stop the Bleed.

If a child runs through a glass door...stop the bleed.

The reason this course came about was that of a school shooting where children died. They bled out with the first responders unable to do anything to help. The College of Surgeons drew in any and all possible expert in the field, which includes the US Military (for obvious reasons). New research and experience show that the use of tourniquets is safe for up to 2 hours. Tourniquets and chest seals (and other related equipment) are freely available for purchase and you can make a very basic bleeding kit consisting of a tourniquet, gloves, pressure bandage. It will be the size of a cell phone, but a bit thicker.
