1) Use quite a high heat grill or braai - it shouldn't take more than 6 or 7 minutes to cook entirely.
2) Rub salt and drizzle olive oil over both sides before beginning to cook.
3) Give it about 3 minutes on each side for a perfect medium rare.
4) Prepare a herb rub with chopped oregano, thyme, rosemary, olive oil and lemon juice and zest; and after the meat is done, brush the herb mix over each side liberally. The mixture can alternatively be rubbed on a wooden serving board if you have one, and the meat will marinate on it once it's cooked.
That's really about all there should be to it. If you're using a skillet instead of a grill, you can rather use butter than olive oil, and use a lot of movement on all sides of the meat with tongs to ensure that the sides cook evenly as well as the top and bottom.
