Boerewors Making

So we got the Biltong thread that is quite good, however, do any of you make your own Boerewors?

I have a packet of Kameeldrift spice from Crown National that I use at the moment what I quite like. I still need to get the fat % correct as the recipe on the packet don't state the amount of fat you need, but I should get it right the next time.

I also need to get a more coarse grinding plate as mine is a bit fine to my liking.

I have a MeatMaster meat saw, so using the mincer that came with that.

So please share what you do, tips or recipes here.
 
I take it this is for any type of worship similar to Boerewors? Else, as far as I know, there are guidelines on the ratio of ingredients to use before it is considered Boerewors.

Boerewors must contain at least 90 percent meat, and always contain beef, as well as lamb, pork, or a mixture of lamb and pork. The other 10% is made up of spices and other ingredients. Not more than 30% of the meat content may be fat. Boerewors may not contain any "mechanically recovered" meat (meat derived through a process where meat and bone are mechanically separated).
 
Yes, I know all of that. Was more looking for what you guys do and what recipe's you guys use - if you do make your own boerewors.
