I second the Sandy Bridge mobo, the i7 2600(K) CPU, and the UPS.
Although Xeon is designed for servers and can handle much more multitasking, so would be better to get that if this is a dedicated server..
And also the SLC SSD..... Just make sure it's SLC - if it doesn't specify, then it's probably MLC.
Guys I don't see anything wrong with getting a good GPU for a server? Servers can use them too... although I think it should rather be a dedicated rendering GPU, than a gaming GPU.
