Bulk cooking question

Hey peeps,

Wifey and I have been contemplating bulk cooking, especially since the slew of power cuts across JHB yesterday.

Was wondering, how long ahead of time can we prepare something like steamed broccoli and bechamel/mornay sauce for it?

Want to maybe "make a day" of Sunday and prepare a bunch of stuff we can just heat up or throw into the oven, and that's my favorite dish at the moment.

Other dish suggestions would be awesome as well. Thanks !
 
You could probably keep them in your fridge for as long as a week. But why not just steam the broccoli when you need it? Takes 5 minutes.

What I tend to do is cook and freeze. Most foods freeze well, with the exception of sauces thickened by flour or cornstarch. Also green and red pepper don't freeze well.
 
Yea, we probably could, but heat & eat would be better, especially for the other things with it
 
Broccoli and bechamel sauce seems to me like it will lose freshness very quickly. Cooking in bulk works better for things like stews and bakes, because they can actually gain flavour by resting. An oxtail in wine for instance like we had last night would have tasted much nicer if it had an extra day to soak in the flavours.
 
With loadshedding a thing of the past, you wont need to worry too much about bulk cooking.
On the other hand it does save time, why not do your bulk cooking on gas during load shedding episodes.

we're looking to make it a fun activity for us on a Sunday to prepare food together, our schedules don't always align on week nights due to work or activity commitments, and we would like to not only be a bit more healthier by eating better, but also save money as this country's leaders are playing "who can light a cigar with the highest denomination note" game they're doing.

Thanks for the ideas cerebus, think we might do a stew/curry/soup/bobotie and freeze stuff like that

That should keep you busy for an hour or two...

Some meals are better suited to this so just think about what goes mushy and what doesn't. Or take the opposite approach and go straight for soup...
