If i can give you one suggestion; go all in with this, no short cuts.
All these specialist places that pop up that make half the effort they need to survive.
If you call it a mexican burger then make it as authentic as possible.
Topped with brisket, put the effort in to slow roast the brisket so that ppl are watering at the mouth to try it.
 
Yes I'm sticking to 3 burgers + 1 veg. I'll rotate the menu every week to see what people actually want to not force them into anything. I'll also test new recipes with that route

Because its currently in my kitchen. Next step is to do trial run within the complex (The Hyperion) every Thursday night and then onto markets. Only once that has paid for itself will it move to brick and mortar venue. As you all know, getting money is a big problem and we have to start somewhere.

Yeah cheers for that. No half measures here. The brisket is slow cooked for 2 days and pulled apart with 2 forks. Dehydrating the Worcestershire is a pain in the ass but it has to be done. Now I'm not going to give away my recipes or secrets. But rest easy, I don't know any short cuts
 
is everything on the menu pork? not sure how that will go down with jews and muslims....
although the vegetarian option is good start.

Pork? Nope. Only the bacon and pork belly. The patty is from a mooo cow
