Pre-marination does nothing unless it has enough acidity to already denature the proteins. Best to simply baste your steak if you have to.

Emphasis was on "good" otherwise I'm sure he could easily find one. I don't know any decent butchers in that area though.

Mate worked in a supermarket when younger and the butcher told him they marinade all the old meat and then try resell it again.
