Just curios to know if anyone of you ever tried to bake a cake without using milk in it?

Me: not yet, willing to try.

Whickey Whackey Cake ( Egg and Milk-free)

3 cups flour
2 cups sugar
3 Tblspn cocoa (heaped)
1 tsp salt
1 tsp bicarbonate of Soda (heaped)

12 Tblspn Oil (75ml)
2 tsp Vanilla Essence
2 Tblspn Vinegar
2 cups cold water

Sift dry ingredients into baking pan. Make 3 hollows in the dry mixture. Place the oil in one, the Vanilla Essence in one and the vinegar in the last.

Pour 2 cups of water over everything and beat the mixture with a whisk or fork. Mix well.

Bake at 350°C for 20 – 25 minutes

This cake is best made in the old black oven pan and can be cut into squares. Icing sugar can be sifted over the top when almost cool if desired. The cake will stay moist for days.

Bavarian Swiss Roll Pudding (serves 6-8) ( Egg and Milk-free)

Make the swiss roll according to the Cake recipe omitting the cocoa.

Make a thin layer of cake in a baking pan. Roll with a damp dish towel. Unroll and spread with jam. Roll it up again.

1 Swiss roll
410g can raspberries or blackberries
60ml ( ÂĽ cup) sugar
60 ml ( ÂĽ cup) fruit juice or liqueur
410 ml mixed Cremora (slightly thicker than usual)
15ml (1 Tblspn) Lemon Juice
15 ml (1 Tblspn) gelatine dissolved in 30ml (2 Tblspn) boiling water
15ml (1 Tblspn) liqueur (optional)

Slice the swiss roll about 1cm thick. Grease and foil-line 1,25 l ( 5 cups) mould. Place slices evenly around mould and moisten with the fruit juice or liqueur. Whip the milk and lemon juice and liqueur until thickened (about 4 min). Fold in berries and gelatine. Pour into mould and refrigerate until set. Turn out and pull back foil. Cut into wedges and serve with extra fruit if desired. Cut wedges for a super pud.

I make those snow flake muffin mixes - it only uses eggs, oil and water. And its like R10 for 18 muffins :)
Not sure if the dry ingredients will contain milk powder...

@OP: Were you looking for only cakes without milk, or without milk and eggs?
Without milk is quite common; I can give you at least one no-fail cake without it.
Without eggs is a bit trickier, but still doable.
And if you state what kinds you prefer, you might get better results ;)

Without dairy if possible.
