Trying to identify which of these are Baltic and which are Oregon Pine.

As far as I’m aware, Baltic has a much finer/closer grain with Oregon having more flaring and knots.

Bonus Q: for those who’ve had wood boring beetles, did you find fumigation to be necessary or did topical insecticides (eg Timberdefence) suffice?

Baltic birch is typically made into plywood sheets and flooring panels cut from those sheets.. Baltic birch plywood has no knots.. at least, if there are any knots, it's not at all pronounced..

To me, all those floors look like pine..

I don’t know if Baltic Birch and Baltic Deal (pine) are the same thing though? Baltic pine was commonly used for flooring.

Nope, not the same.. the knots in your floor is very much pine like..
