Cast-iron pans

I also think you need that for heat management. You don't want it to retain so much heat when you lift it off the gas. At least for Chinese cooking.

Got one late last year. Awesome to use, especially if you have the stove to back it up.

Normal carbon steel rules apply, ie seasoning/care etc
The Chinese bought 'me' another one in November last year. Apart from seasoning it i haven't touched it.
 
Because steak and stews in anything other than cast iron is just not on.
The vast majority will be vegetarian dishes (I'm not searing meat). I've seen some mention of acidity not being great for cast iron, so I guess tomatoes etc. are out? Not sure how big of a concern that is.
Yeah I agree to a point, but that doesn't seem to be what @saor is going to be using it for mainly.
 
Its very easy to clean and remove rust of old pans too. I am honestly not a fan of Le Creuset as they are quite pricey generally. However they last very long.

It's my favourite pan at the moment.

We have a square griddle that somehow found its way into the cupboard. It appeared one day at my in-laws and they have no idea where it came from or who bought it or left it there and no one claimed it, so we did. Nice little thing but I wouldn't buy it for myself, not for the price and size.

Looks suspiciously like this except the handles are different.

Buying an untreated/uncoated cast is always going to be plenty of work for you with maintenance.

Between never really washing it properly and having to re-season it all the time I can’t recommend an enamelled cast enough.

This is my daily driver and I can’t basically do an egg on here as non-stick as can be.


There are other smaller ones that are even on special right now.

Check the Cerise 23cm.


But I’m sure other brands of enamelled cast iron would be near as good.

These are also indestructible, acidity is a non-issue.

What's the South African equivalent of crisco? Apparently it works well for seasoning
