Ceramic knives

Just don't drop em.
 
Why not just sharpen a plate and see how that works - kinda like trying before buying?
 
You'd need to use something harder than the blade so you're looking at a diamond sharpener.

This. Ceramic knives are very nice, but yeah, don't drop or stab with them. They're also useless if they're blunt, so you need to keep an edge.
 
Mine hasn't gone blunt yet, had it for about a year now, but use it very carefully.
 
We have a few, and they are crazy sharp. But my chef knives are a little sharper and glides through food a lot easier. It's just more work to keep the steel ones sharp.

Get one, see if you like it.
