As per request from @Shazpm I am going to start with my "Tabasco" recipe.


Things you need:

Normal Chillies, a half bag of loose chillies works (green or red, do not mix else you will get a brown mix)
A few habanero chillies (depends on how hot you want it)
Ground Black pepper
Salt
Some Mint leaves
Vinegar (Spirit vinegar will do, preferably white vinegar or the sauce will turn brown, but what ever you can find)
Some crushed garlic
Pressure Cooker (Electric works best)
Hand held food processor
sieve
one lemon/ lime (smallest you can get)

Chop the chillies up small, add about one or two sticks of mint leaves also chopped.
Chuck everything into the pressure cooker, add a pinch or two of salt and pepper
Depending on the amount, one or two tbs of crushed garlic.
Juice in fresh lemon/ lime
Pour in the vinegar till everything is floating and a dash more afterwards.
Close the pressure cooker lid and cook on high for about 10min (cook time with electric cookers) (Tip make sure you have your kitchen windows and door open or else you will have some trouble with the very strong smell)
When the pressure cooker is done use the hand food processor to chop everything up, this is important the mix has to be still hot when mashing it up.

Wait for it to cool, sieve and bottle, bottle into a sanitized bottle, let it stand for about one week before consuming.


This recipe works on feel, I can give you what to use but not a precise amount as even I play around with how much of each I use and every batch is different. It comes down to feel of things after the 2nd or 3rd batch you will know how much of each to use

Here is my basic method - my sauce has a sweet start then the burn kicks in. This is not take your head off hot - you can do that by using hotter chillies or varying ratios. For us, the red one is a favourite.

Ingredients (Sauce Base)
800gr Chilies
150gr Fresh Ginger
3 Tablespoons Crushed Garlic/100 gr fresh garlic cloves/
2 Onions
200ml Whisky (I use peated scotch)
350ml Apple Cider Vinegar
1l Apple Juice (cloudy if you can find it)
5 to 10 Apples (peeled and cored)
4 Tablespoons Sugar
Salt and Pepper to taste

Ingredients (Red Variation)
1600gr (Four Tins) Chopped Peeled Tomatoes
3 or 4 Red/Sweet Peppers

Ingredients (Green Variation)
800gr (Two Tins) Mangoes or Pineapple (with syrup)
3 or 4 Yellow/Green Peppers

Ingredients (Habanero Variation)
3 or 4 Yellow/Green Peppers
300gr Green/Non Red Tomatoes


Method

1) Take the tops off the chillies and deseed if you wish. Suggest wearing gloves for this step.

2) Peel the onions, ginger and apples (also core apples).

3) Put chillies, peppers, onions, ginger, garlic, sugar and apples into a food processor and chop/blend well.

4) In a large pot, heat some oil and pour in the mixture from your food processor to fry/simmer for around 10 minutes, stirring once or twice.

5) If your tomatoes are fresh/whole, put these into the food processor and blend.

6) After the 10 minutes, add your tomatoes, any other fruit, apple cider vinegar, apple juice and whisky to the pot and simmer for at least 20 minutes stirring two or three times.

7) If you have a stick blender, use this in the pot to start getting your sauce smooth. Taste test and add salt and pepper as needed. If your sauce is a bit hot for your taste, you can add some water to thin it out.

8) I like a very smooth sauce, so also put it into a liquidiser to make it super smooth and return to the pot.

9) Reduce by simmering slowly for another 40 to 60 minutes.

10) Bottle – if you want to preserve, then follow usual process to sterilise bottles and seal. Failing that, store in the fridge.
