co.za domain registration with ns control

Yes. You can pay online as well with Master/Visa.

All the info is in the "HowTo Guide".

You download the application form (a text file), edit it in a text editor (NotePad if you use Windows), and eMail the completed application.

You will have to setup DNS first and wait for a hour or two for all the DNS servers to update before you can register on http://co.za/ .

I don't think there is really another way if you want to register the domain yourself.

Buying, for example, a co.uk or .ie, etc, I can purchase the name, log in and manually edit the nameservers (through some companies). Was wondering if there was a similar service in SA.

They all have the same service. You have to either purchase site hosting or if they offer a separate DNS hosting solution, that.
Most hosting companies in the country allow you to do this.
Personally, I prefer hosting overseas, you get a LOT more in terms of service, stability and knowledgable support staff. At a VERY low price.
I currently do all my hosting at mediatemple.net - only a starter account but I'm hosting 5 domains on the same service ast $20/month.
Hetzner sucks balls. Don't host with them.
