Cooking Sous-Vide?

I awoke this fine morning to find that the Vegematerian English HO had prepped dinner for the night.

A Christmas Gammon in a vacuum bag sitting in the slow cooker....

Now, I understand the art of cooking Sous-Vide, but surely cooking meat inside a plastic Vacuum bag for the next eight hours cannot be healthy for one by any stretch of the imagination?

Are the bags that one is meant to use when cooking this way, not specialized cooking bags?

HO has now removed the Gammon from the plastic....

/Moose threatens not to consume.....

Slow cooker and sous-vide is not remotely the same thing. And yes, you need special bags.
 
@Rhandir is the sous vide expert on MyBB. Sure he will chip in.

I'm yet to try that cooking method. Especially on steak.

Did you get one of those emersion stick versions or the whole machine?

I'm currently doing mostly reverse sear on my steaks.

Was looking at getting an emersion stick one but haven't convinced myself to fork out that much money if I'm not going to use it regularly... Or in other words. I also want a speed light for my camera bag and I think it is a better investment. :D

Immersion stick version. We love our steaks so I'm sure it will be a worthwhile investment. It's not that much more expensive than most kitchens goodies so I reckon a good addition to it all.
