I heard that SA maize is not the same as Mexican corn and can't be used for making tortillas. Anybody know where I can get corn tortillas from in SA. I am in George and can't see any tortillas available anywhere in SA. I really love Mexican food and was wanting to introduce people from George to the best food in the world.

Corn tortillas are made from masa harina. Masa is made using field corn aka miellies that only get harvested after they've dried out to a level between sweetcorn and popcorn kernels. Sweetcorn won't work because they're too mushy, and popcorn kernels won't work because their shells are too hard.

The field corn then gets nixtamilized (corn boiled and soaked overnight in a water solution of calcium hydroxide) before being drained and ground up in a food processor to form a dough. Food grade calcium hydroxide is easy enough to find online, but field corn is another story.

You could also simply buy masa harina from that Aztec shop in Jozi but I've read that brand isn't the greatest and it doesn't compare to fresh, homemade masa.

Have you tried the tacos? I made mine from scratch and they were amazing but yoh it was a lot of work.
Yeah, very happy with them we do make ours from scratch as well, once you got the rhythm going they not to work intense

We purchase Masa Harina from Azteka in midrand as well and make our own Tortilla's. Also use their hard shell taco shells and nacho chips and have been very happy with them so far. With the press they sell making the mexican style tortilla (smaller than the big USA style wraps) is very quick and easy.
