I daft question, but never worked on these, but do I need to bring the storage manager down to add new hdd? Or can I just slot them in and add the new array?

Read the manual? (google / IBM website)

Each brand and series of SAN I've worked on so far has a different method. Some can add a disk on while live (online capacity expansion) and some can't.
If you are replacing a disk, my guess would be that it can happen live, but best read the manual beforehand. -- Never had the delight of working on IBM kit.

If in doubt, get a SAN specialist who has worked on that particular model to help. They can be a bit pricey, but how much is the data worth to you/the company, and if in doubt, have a very recent backup just in case. :)

Often a support contract is worth its' weight in gold when it comes to data storage.
