Decent Knife Brands?

Here's a bread knife that won't break the bank and is very good quality : LINK
Is it because of the name/brand and look that people prefer Wusthof over Victorinox?

Victorinox steel is good, but I always like a knife where the steel continues all the way through the handle. Less chance of the blade shaking free of the handle over time.

Low end Wusthofs also have a separate handle and I don’t like those too much either.
 

 
I bake a lot of [crispy] breads and they're no match for a bread knife. Steel vs flour and all that.

Unless you're using a granite/stone cutting board? In which case you got what you deserve.

I did look at that actually but had to have a new knife TODAY! Not tomorrow, not next week, TODAY :laugh:

P.S. I might have found a genuine, knife loving artisan to relook at these knives. If he agrees will post his details here next week.

Exactly, the lady at the shop today showed me how metal on the cheapish Wusthof I bought in the interim only fits along the top of the handle, on expensive knives the metal goes right through.

You can feel it in the weight too.

Victorinox also come highly recommended. They are work horses! Nothing wrong with them. Great set of knives at those prices.

Struggled to find them in brick and mortar though. The intention was to visit Sharp Edge today but they've moved from Sandton City to Bramley. Ain't nobody got time for that.

Many Pretoria side. Likely your best bet is binuns also online, but cape union marts stock them too and some homestores

I ordered a custom set of cutlery, knives, cleaver and a throwing axe from this guy:


It's a lot better than those expensive japanese chef knives that are too hard and prone to shattering. The metal is light yet razor sharp, it feels like a natural extension of your hand when holding any of his knives.

My most prized damascus chefs knife was made by this guy. I waited 2 years for it, and bought it at auction:

I also had a bunch of my Wusthof knives butchered by a “knife sharpener pro”, he was even recommended by a few people but I forgot that some people think a Chinese cheapie is a real knife so you need to take advice like that from whence it comes.

I was mad for weeks afterwards, most of them are still lying in a drawer away from sight, it pains me to even see them :(

Those knives are worth fixing, if my connection materialises I'll pass his details along. Or maybe I'll report back after mine have been done, just so I can speak from experience.

Alternatively, I'm sure you'll find a willing buyer hint, hint..... but rather let's have them sharpened if we can so you enjoy them again.

They can be repaired, depending on how damaged the blade is.
