Disabling S.I.P.

Digging deep here and looking for the apple geniuses out there.

I have the frankenstein of macbook pros.

The mac is essentially a music server of sorts - no other real use.
Its an elderly machine originally running big sur.
I needed it to run a specific version of itunes. This involved rolling back the os to high sierra.
Then it was a reboot into recovery to access terminal and disable SIP.
Reboot without SIP to allow uninstall / removal of itunes version native to high sierra.
Then another reboot to operating system without itunes, thereafter installing the preferred version of itunes via Pacifict.
Machine runs perfectly in every respect.

However, from time to time SIP kicks in, preventing itunes opening.
When that happens, its a case of booting to recovery, opening terminal and disabling SIP, followed by reboot.
All is well again.

Question here is related to SIP.
So SIP protects certain system files being deleted / changed etc.
I'm guessing the SIP command / function contains some kind of list of files / folders to protect.
Is there any known way of editing SIP's functions.

What I'm looking for is a way for SIP to exclude itunes when it runs.
I dont particularly want sip permanently disabled, but at the same time it sees near zero internet connection, itunes music is typically loaded / updated via airdrop, and its connected to appletv via lan cable - so its a somewhat "low risk" machine.
