I have an industrial coffee burr grinder and 2 roller grain kill. Haven't used either for flour but that's what I was planning to use. We'll the industrial burr grinder. Can do 20kg an hour but won't do more than 1kg at a time anywayWhere did you get your mill from / which mill are you using?
I do all my own flour compositions, but obviously milling yourself is best.
