Domain hosting advise?

Hi All,

The goods ...
My domain is running nicely on Google Apps.
To mention what I use, I have access to:
1. 10GB of email storage, so far 600MB and counting.
2. SMS reminders for my calendar events.
3. Calendar and contact sync to mobile devices.
4. Conversation view in email messaging.
5. An evolved webmail interface.

The bads ...
My concerns are:
1. Privacy, knowing that emails are scanned for 'the sake of ads' bugs me.
2. When an international connection drops, goodbye wonderful GMail interface - *major problem*.
3. Sites using Google Apps cannot be customized as you wish, you forced to use their templates.

Does anyone have any advise as to what one could do to get the best of both worlds?

I've got google apps for email and all that and have a clouding VPS for all my hosting needs. Hosting your own mail servers won't give you the reliability google apps offers and 25GB per user is mighty nice to have.
