Easy Dinner Recipe

So I'm (trying) to eat healthier and I found a nice combination that's awesome and easy to make

Grilled Chicken breasts with cheesy goodness.

Salt + Pepper + Cajun Spice + Parsley + Dijon Mustard (the dijon goes on first btw)

I bake that for 8-10 min in the oven and then I sprinkle on gouda and some mozzarella and then put it under the grill for another 4-5 min. Serve it on a bed of rocket/lettuce/feta/cocktail tomatoes/cucumber/celery (about 3/4 of the plate)

It was very nom and simple to make and easy to adjust/keep fresh for cooking for 1 person

Thinking of experimenting with rosemary and thyme next time :)
 
Sounds yum. I am really not a creative person and don't enjoy cooking....I love to eat though :D

Will try this some time.

How healthy is the cheese added to it though?
 
it's not that much cheese, so, much healthier than, let's say, a pizza. It's also more satisfying to be honest. You don't feel as heavy or lethargic afterwards, and I usually grab an apple to munch for "dessert" after as long as it's a good few hours before going to sleep

Nice. Question though...the chicken. I can't seem to find anything less than R35 packs...which is too much for 1 person.

So do you just split & freeze it?

I always buy bulk chicken fillets and then put into smaller containers and then into the freezer.

We bulk buy chicken at month beginning and divvy it up into freezer bags. We try to always have extra chicken because it's like...the most versatile meat ever.
 
Nice recipe but i brine all chicken breasts for a day before cooking.Chicken stays moist even after beng reheated in the micro.
