Eggs for Brekkie Recipes

Hello all

Was watching braaimaster yesterday and made me think of different recipes. They made egg cups and egg benedicts

so i have been making omelettes for brekkie, now its not boring cause it tastes damn good but i want to try other omelette and other egg recipes

My recipe is :

2 eggs beaten (add a drop of milk and water), some mixed herbs spice, chilli and paprika into it
Mushrooms fried with garlic and butter (and parsley at times)
macon fried
cheddar cheese
danish feta


now i want to try add different ingredients and stuff

and other brekkie ideas with eggs

what do you suggest
 
Scrambled Eggs:

- Fry some onion, chorico and tomatoes (all finely chopped)
- Add Cayene pepper and salt
- Throw in 5 beaten eggs, with a dash of milk
- Just before the scrambled eggs are nearly done to your liking, throw in a handful of finely chopped feta, and allow it to melt
 
2 eggs, some milk,teaspoon sugar - breakfast of champions.
 
Swap macon for bacon - instant upgrade.
 
I know it sounds odd but I make Hubby Peanut butter and Jam omelette for brekkie. I know it's different but think of how lekker French toast is, the flavors work well together. He no longer eats bread so to him it's like a PB & J Sarmie. He loves it and I was skeptical at first but omw it's Delish. Standard 3 egg omelette mix, fried in 2tbs coconut oil then when it's a little solid I drop on a few tsps of PB and J. Sometimes Nutulla for the kids and a sprinkle of crushed almonds.
 
Oh something I tried the other day is a baked .....shoot don't actually know what to call it but I bought fresh French loaves and cut a rectangle out the bottom so it stood upside down. Pulled out all the bread insides so I was left with the shell of the bread basically. It was like a bread canoe. I cracked 4 eggs into it and added cropped bacon, cheese, baby tomatoes, feta, fresh herbs and garlic. Put it in the oven for around 20min and bake. It was Delish and basically any filling would work. When I took it out I let cool for 10min then sliced it into quarters. It was really good, had leftover cold the next morning for brekkie too. Very nice, my kids loved it.

i have seen this but havnt tried it

i saw it on braaimaster where they added the ingredients in a metal cup ..cant recall bread being there
 
Saw this on Nataniel's new show Edik van ....something.

Separate the yolks and whites. Whisk the whites (with salt?) with an electric mixer until nice and fluffy. Scoop on a baking tray into little nests. Bake at 200 °C for a few minutes until it starts to brown. Take it out, drop in the yolks, one in each nest (watch out those yolks break easily!). Salt and pepper. Bake again until yolks are cooked to your liking.

Bit of a shlep to separate and whisk, but delicious.

Ps. Don't forget to spray-and-cook/grease the baking tray.

I made this today. I put a layer of bacon at the bottom, then the eggs, mushrooms, tomato, more bacon and cheese. was absolutely delicious.
