Fish braai!?

Hi myBB'ers,

I'm going to do two nice size carpenters on the braai tonight. I'm not sure whether I should do them straight on the grid or in tin-foil. If in tin-foil then what am I going to stuff them with?

Any hints and tips or suggestions please?

Both are great but I prefer in foil else it makes a mess of the braai grid!

Keep it simple and don't kill the taste of the fish. At the most... Aromat with sliced tomato and onion.

+1 for the foil
Instead of the Aromat, I use a bit of white wine and a pinch of mixed herbs. As Mickey said, you don't want to overpower the taste of the fish.
 
or make a lemon butter basting sauce ...never did a fish braai but had snoek which was basted like this

and came out good

If it only came out good then you did something wrong!
 
I normally do the foil until the meat turns cooked white and then I flip it open on the grill for the true braai feeling otherwise you might as well have just used the oven.

Can't go wrong with any combination of butter + lemon + garlic and the usual salt and pepper.


With snoek I had plenty of apricot jam to the basting but not sure how that will work with other fish so probably best not to experiment.

@Morty, I meant unwrapped on the grid, not straight on the coals ;)

At this stage I'm thinking I might do one on the grid and one in foil.
 
On the grid - use the garlic butter and lemon method and keep brushing it on and turn often in the beginning to prevent it from sticking to the grid.
 
Lemon butter, garlic, herbs & apricot jam.

In foil and towards end place on grid.
 
Always baste cook fish. If you throw it straight on grid it will dry out.

Bit of foil and a butter sauce as suggested above
