Eish - two things.

1.) In google contacts (https://contacts.google.com) if I select 'All contacts' I see about 60 entries. However, I can still search for a name and see multiple entries that aren't displayed under 'All contacts'. How am I supposed to remove / see these entries if they're not shown under 'All contacts'? The only way to find them is by sending an email and seeing their details pop up.

2.) Some entries...they can't be deleted. Do a search for a name, get multiple entries:

Select the one's I don't want, choose Delete, they go grey for a second and then they're all still there?

It's because Gmail is pulling contacts from other accounts that are connected to your phone (Facebook, Twitter, Google Plus, etc.).
To delete those contacts you have to log into those accounts and remove the contacts from there first.

I thought so too initially. However what happened here is someone (let's call her Jane) emailed me numerous times with a different email address. So I've got 4 entries for Jane with different email addresses. She has only ever had one of my email addresses. All those email addresses of hers only exist in that one gmail account, not in any other gmail accounts or devices.

Why not just find and merge duplicates? Also turn off Create contacts for auto-complete in gmail settings otherwise it will save every person you email under Other.
They don't come up as duplicates. If I search for the name there's four distinct entries each with a different email address.
