C-grade? Old cows? Tougher meat?

Yes, all the meat in the butchery is by default A grade, young cows. But also graid fed, and routine anti-biotics etc. C-grade is older meat. They hang the meat for 2 weeks which makes it less tough, but yes by default, it's tougher. The yellow fat only is present with A-B grade and C grade, which is quite more tasty. Since this is grass fed cows, the meat has a very nice taste.
