Is it cleaned already, and is it tubes or steaks? Soak it in some milk in the fridge makes it nice and soft.

Personally crumbed and deep fried is the best :D But if you going to grill it, mix it up with some Cajun spice and grill it. Make some savory yellow rice and you got a nice seafood dinner!

Strips are as good as rings :D just add some cajun spice to some flour and coat the strips evenly. Heat some oil in a pan or pot enough to cover the calamari while it's cooking.

Basically like frying chips :p it should go golden brown and you don't want to overcook it. But soaking it in milk definitely helps with tenderness.

Make some garlic mayo and you're ready to eat!

Crispy, tender, mouthwatering calamari ....
Marinade squid for at least 30 minutes. I left them in the fridge for the 1 whole night.
Coat with corn flour (put the flour in a plastic bag, and add 2 to 3 rings at a time and give a shake. Take it out and place to one side. Do all you calamari this way and then do batches in the oil. Don't try to fry all the calamari in one go) and deep fry the rings (in batches) about 1 minute, or until they are golden (the secret to crispy calamari is hot, hot oil, just below the smoking point).
Serve immediately with lemon wedges, garlic mayo or any sauce you want

500g fresh squid, cut into rings
500ml oil for deep frying
300g corn flour
1/2 tsp salt (marinade)
1 tsp sugar (marinade)
1/2 tsp pepper (marinade)
1 egg white (marinade)
1 tbsp curry powder (marinade)
dash of five spice powder (Fish spice) (marinade)
1 tbsp plain flour (marinade)

Still on the topic of seafood - we went to Montecasino on Saturday night and it turns out that a few of the Ocean Basket franchises (Montecasino, OR Tambo and a few others which I have forgotten now) have some meals that are not part of their standard menu items and these are very yummy, e.g. Garlic & Chilli Prawns and a Fry Basket consisting of haloumi cheese, squids, calamari and chips.
