Help with cutting down on Carbs

So I need some creative help from the food gurus around here. My wife and I are trying to do a lower carb, higher protein and veggie/fruit diet. Now don't get me wrong, we are both pretty healthy eaters. We just want to lose those extra 4-6 KG's that are hanging around.
Now I know that a good exercise routine is important, and that is something that we will be doing. Mostly going for long walks with the baby in a stroller and things like that.

We really need help with good substitute meals for the standard ones, that will keep some variety going.

Examples of what we currently eat:
Cereal/muesli for breakfast
Flavoured Yoghurt as a mid morning snack.
Cheese/ham/tomato/tuna-mayo/cucumber/lettuce sandwiches for lunch. Obviously not all of them at once, just those combinations of ingredients.
For dinner a combination of meat (Fish,pork,chicken primarily, red meat is only really eaten in mince dishes or as a braai), potatoes(mashed or roasted) and microwave in a bag veggies is often on the menu. Salads will make an appearance. Some kind of pasta. Spag-Bol or other mince based meal.

Now we are fairly happy with the morning meals of cereal and yoghurt and often a piece of fruit We need to have carbs so leaving the morning meal alone seems like the best course. We want to cut out the carbs from the mid day and evening meals though.

Some lunch time things that we have come up with. We really want to cut out the high amount of carbs we are taking in with bread based lunches.
Tuna-mayo crackers, but replacing crackers with thick cut cucumber for the crunch.
Grilled chicken salad.
scrambled eggs.

Dinners we are planning on replacing potatoes with large flat mushrooms. Is replacing potatoes overkill on the low carb side? What replacements can we use for pasta type meals that include spaghetti or penne types of carbs.

I have never been a bad cook with the basics. I tend to have a decent palate for combining tastes, especially with meat. I have just been brought up where carbs are simply part of every single meal and I am having trouble finding ways of making these meals filling and yet still exciting without being quite redundant on simply adding more veggies.
I am not a great veggie chef either, my creativity in this department is seriously lacking. How can I make my veggies more varied yet still fairly easy to do in most cases. Seeing as microwave bag veggies is the base I am pretty sure that most anything would be an upgrade.

Some advice on mostly easy things to add to my repertoire while cutting out carbs would be greatly appreciated.
 
Lose the potatoes, rice and pasta. Be very careful of fruit too - it's very carby.
Lose the bread too, as well as the cereal. Make sure your yoghurt is not sweetened with sugar. Have an omelette or scrambled eggs and bacon for breakfast rather than cereal
Beware of carrots and peas, they're very starchy as well.

As a replacement for rice, I grate up a cauliflower then pan fry it with salt and pepper, and maybe some red peppers or mushrooms.

Pasta I haven't found a decent substitute for... I just live without it.
 
Cut the muesli and flavoured yoghurt and bread and stick to two small fruits a day.
In general I find cutting out wheat, sugar and dairy is quite good.

The Cauliflower is a nice idea. I sort of know what to cut out tbh, it is more about what to do to replace that quantity in the meal though. For instance: Pork, Steamed veggies and Mashed potato. What to do to fill that gap once losing the mashed potato? Simply more pork or steamed veggies is of course possible, but just seems boring. The Cauliflower would be a good substitute here as well I guess.

What do you do to cut bread out at lunch time? Can't have chicken salads every day. What other low carb alternatives are there to the standard, salad + meat combo?
 
I have also cut all carbs, sort of.

Instead of cereals, I eat a fruit salad with yoghurt - lost a few kg quickly, but my body has adapted.

If you really must, eat brown rice instead of pasta and bread. NEVER eat potatoes!

Cut out all sugar, obviously.

I do a salad with meat or tuna or salmon, with lots of lettuce, cucumber and tomatoes.

Sweet potato, but not too often.

I guess I will try to come up with some inventive ways to tasty up our food at night especially. I am guessing that frying the chicken in butter is also an option when it comes to chicken salads. Seeing as the fat content needs to go up to replace those pesky carbs? So the need to grill everything is not necessary then?

Fried in butter or olive oil. And you can eat the skin ;) be careful of sauces but spices are good. Chicken breasts wrapped in bacon and roasted are awesome too...

For lunch I just have whatever meat is on offer in the canteen.

if you're going to fry with olive oil make sure it's just plain olive oil and not virgin or extra virgin, I prefer coconut, grapeseed or canola

I have been following the Paleo Diet 90% strictly since mid May and it is working for me realy well. I have dropped 12.5 kg so far which is about 2/3 of my initial target.

It's not a low carb diet as such but you are cutting out grains/refined flour, dairy (except eggs) and refined sugar and getting your carbs from reasonable quantities of fruit and veg. I can eat most of what I like to eat and there's a bit of flexibility if you want to allow yourself the occasional illicit treat - I still allow myself some beers at the weekend as normal (which are decidedly non Paleo) and I'm going to treat myself to my first McD's for a while tomorrow.
 
Celeriac (aka celery root in American) can be a lower carb alternative to potato but I never seem to see it here in SA

I have eggs and either some bacon or low carb porkies from Woolworths for breakfast, chicken and salad for lunch and a meat with more salads for supper.

I don't miss potatoes and pasta.

I will look out for that, but I am only 86 - 88kg at 6 ft, so not largely overweight at all. If I lost 10kg is a month I think I would **** myself. I only want to drop to around 82 and start upping my muscle mass once I get used to the diet.
