I am lucky to be getting fibre in the very near future
What equipment / network to I require inside the home to ensure that everyone / smart tv's etc enjoy the superfast speeds? Can I use wi-fi, or do I have to run fibre cables throughout the house?

Fibre will most likely terminate at the router - so you can use WiFi to distribute it from there :)

CAT-5E (1Gb/s capable ethernet) + 801.11 ac dual band... Fibre is for long hauls or between building where you are worried about lightning. The CPE/modem device from your provider will give you a ethernet point... maybe wi-fi, but I do not like having my modem as my AP.

My rule of thumb... if the device is going in stay in one place... run a cable to it. And save yourself (/and neighbors on the same channel) the unnecessary chatter on your wi-fi. Most ethernet enabled consumer devices are 10/100, so for your internal network get a 16x port 10/100 switch and a 8x port 1GB/s switch for the few devices (i.e. storage PC) that need gigabyte. Run your wifi AP on both 2.4 and 5.8 and where the devices supports 5Ghz join to that AP.

Using wifi will greatly reduce the speed each user.

Rather just install Gigabit Ethernet, much cheaper than running fibre through your house.
Cybersmart actually refuses to sell you a wifi router with their fibre offering unless you accept that your speed will be less than advertised.

Unless he gets one of those fancy multi antennae routers.

Ideally yes.

But WiFi is quicker and easier to get up and running. +For phones and tables you will need WiFi...

Sure I think most will have WiFi for that reason. We all have phones and tabs, so the long answer is to get the real benefit of the fibre line you need to wire your connections to devices that support it
