Home Setup - Some advice please

I have the following:

A. Core 2 Quad Q6600 with 2GB RAM (upgrade to 6 next week), GeForce 6500, 160 GB SATA, 200 + 320 IDE HDD, high definition on-board sound.

B. Some AMD 32 bit cpu with 2 GB RAM, Radeon 7000, 40GB HDD, on-board sound.

C. Old laptop for the wife.

I also have a SAA7130 TV Card.

My needs/wants are the following:
1. Work PC (C2Q),
2. HTPC (AMD),
3. NAS (with possibly some RAID (maybe 4 x 300GB with the RAID where total would be 900GB)) (AMD)

Video:
I would like to be able to selectively output TV from the AMD to two plasmas and the C2Q. I would also then want to output MediaCentre (or the Linux equivalent) to the two plasmas. The plasmas would also need to be able to view TV straight from the DSTV.

Audio:
Both plasmas have a dedicated DVD player and amplifier, so I'm not really too worried about 5.1. If possible I would like to be able to output 5.1 to one of the amps for gaming purposes (I'm not a big gamer, but you never know).

Mostly the HTPC would be connected to the TVs, but I think for gaming purposes, I'd better hook my C2Q up and run it from there (after replacing the GPU with the 8800 or something?).

I'm thinking of installing Linux on the AMD with possibly a streaming app for TV/Video to my C2Q and the wife's laptop.

I really don't know if this is possible, even though I'm thinking that it should be even if I need a few custom switchboxes, etc.

Please tell me where I am mad, or where you would do things differently or what I perhaps didn't think of, outputs I would need, etc, etc, etc.
