honeycomb & parmesan cheese - ever tried it ?

a friend of mine is a great one for experimenting with food combination - some are spectacular - some are spectacularly bad.
I have always been a willing guinea pig !

So, today I was confronted by crackers (and other biscuit type of "carriers") with thinly sliced honeycomb & a tiny sprinkling of parmesan cheese.

I was a little apprehensive at first - but hell yea - very interesting combination !


My favorite was a digestive biscuit, with the honeycomb & parmesan combo.
2nd was matzos with the combo.

Matured cheeses develop a nutty and sometimes caramel flavour profile. Works really well with honeycomb, pralines, caramels, and most sweet things. Apart from chocolate. Not a fan of chocolate and Parmesan. Maybe white chocolate, but milk chocolate is a fail...

Now that you mention this, I actually now remember staying at the beverly hills hotel in umhlanga, after lunch huge cheese boards would arrive with various jams & honey.
