I have a "thumbsuck" recipe which I have used since the days of the rinderpest (only joking but close enough); Always use vinegar/old white wine/red wine/or kombuch which I have let mature so it can be vinegary.A good marinade, can be made from tomato sauce, worchester sauce, sunflower oil, spice of choice. I like origanum and basil.
