How to safely store sliced Biltong?

Biltong was on special so I bought a few kg's pre-sliced and its pretty wet/fatty, the way I like it. It'll take me a few weeks to eat it all so what's the safest way to store it so it doesn't start growing mould or otherwise go bad?

Come on over to my place, I have the perfect biltong storage situation.. Biltong won't even have time to go bad..

Hopefully it is still nice and wet like all good biltong should be...so just freeze it.

In my house I would keep it in the fridge in one or 2 paper bags from the butcher...but with me and the kids it would last maybe 7 days.

My mind says 'a few' is less than 5 kg. You , and kids, and you talk 7 days???

Either vacuum packed and into the freezer or paper bag it in the fridge.

Vacuum pack and freeze but that’s a guess. Sliced biltong rarely makes it home.

Actually not recommended ....

 
This thread sucks. I’m so hungry and lus for some biltong now.

Just a heads up Food Lovers market has a regular Monday promo, beef biltong R199 kg, it's really good, just make sure to just get the plain version, they have a whole range of "flavours" but it’s just the plain slathered with sauce after the fact. Very nicely cured, just the right amount of wetness and I asked the lady to cut up the piece's with more fat on them and they are soo good.
 
I normally dry and freeze large batches of biltong and droëwors and then just take it out as and when I want/need to.

When my supply gets low I dry and freeze more ‘
