I was thrown in the deep end with my job in terms of Linux. Not that difficult at all actually, just different. Now I don't really use the GUI anymore, default app opened on startup is Terminal.
If you buy one of these e-Sata->Sata you can loop the e-Sata port back into the case and connect the 6th drive beneath the 5.25" bay. I could not find a similar cable in SA, so had to order that one.
Unless you also want to use the server as a workstation, I see no reason why not to install Linux. It is a lot easier than you think.

I might like to use it as a workstation too. Or at least have that option if I ever wanted to. And I could RDP to it etc. too. I shall look into some linux solutions too though.
In terms of speed, does it offer any advantages over Windows? (transfer speed)
I was unable to get the eSATA -> SATA cable working. Apparently it is unpowered, so how did you do it?
Can you not run a power cable to the drive too?
