I'm a bit dumb about how this all works.

My story:
Until yesterday I used a red Vodacom 3G PCMCIA card to connect my laptop to the internet.

Yesterday (as mentioned) I got a new phone. It is a Nokia E51 and has HSDPA or 3G (one of the two at least I'm sure because there are pictures on the box).

I was able to connect to the internet from my laptop by enabling 3G on the phone (DUAL Mode) and clicking the connect button on PC Suite on the laptop. It all worked out-of-the-box as they say.

I was also able to setup a wifi connection and browse the net on the phone using my home wifi LAN/wifi route.

Then I found when I left home I couldn't seem to connect to the internet (obviously out of range of my wifi router). I called Vodacom and they sent me some settings and I can now browse.

The settings they sent are called "WAP.gprs" settings. When I click the online icon I go straight to Vodacom LIVE but can browse other sites.

My Question:
Am I using 3G/HSDPA or GPRS with these settings and why / how does it work?

Yes, the connection speed and type are negotiated between your phone and the tower when you connect. You can force it only to using a preset connection type (GPRS/3G/HSPA) but the default it to use the best available.
