Does it need WiFi to do the job of switching he relay?
I recall on stock firmware its better to have them connected to wifi, as they sync time, and when that goes funky they stop working properly.OK... that sounds about right. Can anyone else confirm?
Might need to reflash it. but yes. it can operate separately. A dht11 sensor coupled to a 3.3v/5v relay on arduino will work perfectly. you can even scale that arduino down to an AT tiny if you can manage the more difficult programming interface. (no usb port. )Does it need WiFi to do the job of switching he relay?
Most of the sonoff modules run a power supply, ESPmicrocontroller with WIFI and a relay.I am not entirely sure, you can set it to switch on/off at a certain temperature or humidity but I am not sure if once saved this logic sits in the switch itself, more likely it sits in eWelink or HA which needs to communicate with the switch.

I have dedicated vLans for "NOT" and IOT devices, works well, some devices unfortunately require internet to work, like "she who shall not be named"Yeah, I just don't want insecure crap on my LAN. I may just set up a dedicated VLAN for this. Thanks for the feedback, it sounds about what I'm looking for.
