My current list of must have apps:

Aperture (much better than iPhoto and was on huge discount in the AppStore a few months back)
Betterzip (cheaper than Stuffit)
CleanMyMac / Applejack / Onyx
iStat Menus - great of system status
Little Snitch (the most I will do for security on a Mac)
Meerkat (if you need to SSH tunnel / port forward)
Microsoft Office 2011 (beats Pages ...)
NewsRack (great for RSS and syncing with Google Reader)
NetworkLocation (if you switch between different offices)
OmniGraffle / OmniPlan (if you do diagrams / MS Project)
Pixelmator
Speed Download
TextWrangler (great free text-editor)
Transmit (great FTP client)
VMWare (find it faster than VirtualPC)
VLC
 
Archiver - easiest "decompression" software to use. Much more user friendly than StuffIt.
AppZapper - to uninstall apps.
ACDSee for Mac - photo editing.
ResizeMe - quickly (batch) resize images for easier emailing etc.
iFlicks - updates metadata on video files and imports them into iTunes.
Lyrica - displays the lyrics of any song currently playing in iTunes.
XBMC - the "bomb" for multimedia.
 
Essentials :
MPlayerX -- much better than VLC which has way too many glitches
Microsoft Office 11
SMC Fan Control -- Macs can really overheat on a hot day whilst running intensive tasks.
Move Addict -- Allows you to cut and paste files on Mac OS X
VMWare -- Better than Parallels
Apimac Secret Folder to hide files
Caffenine
StuffIt

Adobe CS5 Master Collection -- even though I dont have all the software installed -- I love it! :)

Can anyone explain how to use Speed Download 5 to me? :)

dont forget "Toast" to burn files! are you enjoying your mac?
Toast, at US$100+, with no upgrade policy and little extra value is easily replaced by apps like LiquidCD and Burn

Simple, but great download manager... Right click on whatever you're trying to download, scroll down the drop down menu to Speed Download and hit Download With Speed Download... Brilliant at managing, queuing and resuming downloads.

Yep, have to agree... They are offering it at $79,99 as a special now but I just can't wrap my head around that kind on money when I can pretty much do the same in Finder. Save the cash and upgrade to Lion when it hits the stores.
 
OmniGraffle, DEVONthink Pro (plus DEVONagent), reference management software (Bookends or Papers), a text editor (TextMate, also wondering about Mellel), an outlining application (Process3 or OmniOutliner), Scrivener.

Some other interesting software yet to explore: EagleFiler (archive and search mail, web pages, PDFs, chats, and more), Curio (note taking, mind mapping, brainstorming, and project management), CopyWrite (a project manager for writers of all kinds).

Unfortunately not the same when using Chrome ...... or am I missing something?
 
Also just found CoverScout... If you're anywhere near as particular as I am about album art in iTunes it's really, really good, especially for those album covers you can't find IN iTunes.

I got Parallels 6 from my brother in the UK (he uses VMWare and got it for a special price).

I am not familiar with VMWare, BUT I love parallels:

1) I am part of PTAWUG and my VM (Windows 7 32 bit) get's its own IP and works just like normal PC on the WUG (Brilliant)
2) BUT even better: I need to VPN into work, but there is no MAC client (CheckPoint Secure Remote) - So I install it on Windows (and connect to CellC / Vodacom on the MAC and I can VPN into work in the Windows 7 VM (Brilliant).
3) So far they both share a lot of applications, so I am happy ;)
