Want to replace my old-school electric Defy stovetop with induction but I don't want anything touchscreen. Anyone seen any local induction stoves that have physical controls?

Those would be cool, hate the touch things. Plus it turning it self off when it gets to hot.
I'll tell you when you're to hot

Ffs, same here.

Have a Defy Capacitive touch Induction Hob. extra safety feature if something boils over. its good. Don't know why you would want knobs...
I enjoy cooking and the tactile experience that accompanies it - the familiar click click click of a knob being turned to a certain heat setting. And also the one time I've got oil or flour on my hands and the touch doesn't work I'm going to be irritated with a tool in my kitchen. In the end it's just a personal preference - I can't make an argument for why. I just prefer tactile objects rather than everything being flat and digital.

Well you are out of luck then.

Seems they do exist. But I'm trying to find something a bit cheaper (though I haven't looked for these prices yet...just assuming they're pricey...).

Why though?

The touch stuff is done intentionally as it can’t get ****ed by water etc and the whole point of induction is you can literally put a cloth under your pot etc.

I put a newspaper and it did not catch fire

You also lose the timer functionality, cool to set one for noodles and stuff since it can heat up so fast that the water is boiling within a minute or so, can't forget to turn it off.

This is one place where I give touch controls a pass as it actually has a good advantage for a cook surface as it makes it so much easier to keep clean.
