Intel i5 vs Intel Core 2 Quad

It's not... I've used a few Intel mobos and never had issues with it.
If you're looking to overclock or SLI/Crossfire, you may be better off with a brand name mobo.

With regard to the 965BE vs i5-750 debate, I also found myself wondering about this. In the end I decided that the i5-750 would be the safer bet, since it performs better with 3D & graphics applications. The backward AM2 compatibility on the 965 is also a bit appealing though, meaning you probably wouldn't need to upgrade from DDR2 to DDR3. But it also wouldn't be very future-proof.
All-in-all, I'd go the Intel route

Intel mobos suck regarding overclocking.IMO they just suck in general.Like charlie said if you wanna
overclock/SLI then a branded name mobo is the way to go...ASUS,GIGABYTE,MSI...etc.etc.

Anyone mentioned that the i5-670 is a dual core processor with hyperthreading, whereas the i5-750 is a quad without hyperthreading?
i5-670, i5-750

At first I was going to call you a liar, but checking up on Intel's site now, you're right. The i5-750 does not have Hyper-Threading...

The question now is, how important is Hyper-Threading? And does the cheaper Quad core make up for the lack of it? It does seem so on the performance charts...

The i5-750 is better because it has 4 cores, the hyper-threading gives a slight advantage. I would take the i5-750 easily for that reason. The i3-530 is a good budget buy, the i5-670 is just bad value for money IMO

If you look at the benchmarks it is clear that four physical cores are much better than two + hyperthreading.
Hyperthreading allows more efficient use of the processor, but two cores loaded 95% of the time still gets beaten by four loaded 70% of the time.(Random figures)
