Internet data between 2 devices via Wifi connection

Does watching movies or playing music from a laptop connected to a smart TV via wifi use internet data?

Where is the movies? Is it being streamed from the 'net or on the laptop itself - the fact that you're asking this question has me wondering whether you in fact know.

It depends. Looking at the Wondershare app description on the Google playstore, in addition to "* Play Seamlessly between Android & Other Devices", it has a feature called "* Transfer via WiFi.
